The net quark flavor is conserved under strong interactions and hence only weakly affected by final state interactions. Fluctuations of net flavor and other conserved quantum numbers can therefore serve as a sensitive probe of the structure of strongly interacting matter and the transition from a hadronic gas to a quark-gluon plasma. I will discuss models and lattice results as well as possible experimental probes based on this concept.
